Chicken Tikka Masala (entree)

I didn’t have any basmati rice, so I used what I had… short grain… I know I am a heathen. Still was damn tasty.

  • 2 teaspoons oil (your choice)
  • 1 yellow onion, chopped
  • 1 skinless, boneless chicken breast, cut into cubes
  • 2 tbsp butter
  • 15 oz (1 can) tomato sauce
  • .5 cup heavy cream
  • 1 package  Chicken Tikka Masala seasoning mix (yes I got lazy on this and didn’t want to make the spice blend. For this one I used Simply Asia Indian Essentials, but I know others work just as well.

  1. Add 1 tbsp oil and turn up to medium high heat.
  2. Add chicken and cook for about 5 minutes, set aside.
  3. Add 1 more tbsp oil to the pan, onion and butter on medium heat. Cook until translucent.
  4. Add cooked chicken back into pan along with seasoning mix (or your own recipe if you are cooler than I am right now), along with tomato sauce and cook for about 10 minutes. Enough to finish the chicken and make the rest of the ingredients hot.
  5. Add 1/2 cup of heavy cream and simmer for about 10 minutes.
  6. Pour over Rice or serve with Naan bread.
